Food safety in a poultry transformation unit
Overview & Synopsis
As you know, we have recently developed a new poultry product, a ready-to-eat marinated cooked "sous-vide" chicken breast meat, and we are about to start its commercialization. On Thursday 17 th , we will have a visit from the veterinary services. Their objective is to assess if we comply with the good safety practices from broiler farming to food marketing, and through slaughtering and chicken transformation, in relation to the marketing of this new product. You will have in charge to present the whole chain from the farm to shipment of fresh meat to retailers, and a synthesis of our health control plan and HACCP applied to the new product, including traceability of meat. Please make a special attention to how we manage the specificities regarding safety related to our tropical location. This visit is very important for the company as the veterinary service will give us or not an agreement to market the new product.
